Coto Makassar or Pallu Coto Mangkasarak is a traditional dish from the Makassar Tribe, South Sulawesi. This food is made from beef offal that is boiled for a long time. The boiled offal mixed with beef is then sliced, then seasoned with specially formulated spices. It is said that this traditional Makassar food has been around since the Gowa kingdom. At that time it was centered in Sombaopu around 1538 AD, south of the city of Makassar. Coto is known to be like beef soup. Coto is seasoned with a multitude of spices, making it a highly flavored food.

Coto makassar atau Pallu coto mangkasarak adalah hidangan tradisional Suku Makassar, Sulawesi Selatan. Makanan ini terbuat dari jeroan sapi yang direbus dalam waktu yang lama. Rebusan jeroan bercampur daging sapi ini kemudian diiris-iris, lalu dibumbui dengan bumbu yang diracik secara khusus. Konon katanya, makanan tradisional khas Makassar ini sudah ada sejak kerajaan Gowa. Kala itu berpusat di Sombaopu sekitar tahun 1538 masehi, wilayah selatan kota Makassar. Coto diketahui laiknya sup daging sapi. Coto memiliki bumbui dengan segudang rempah, merupakan makanan bercita rasa tinggi.
